French FLASH GALA ™ tart

“So here’s my long awaited French apple tart. This tart was originally created by Cedric Grolet, one of my favourite French pastry chefs. This is my first attempt at making this tart.

Cedric won numerous awards including World’s Best Pastry chef. I hope I have done justice to his recipe.
This tart has a beautifully thin shell, a frangipane layer, an apple compote layer and topped by 1mm thin layers of FLASH GALA apples coated with a lemon syrup and butter. Each layer gets baked before another layer gets added to it.

This improved Corder Gala apple was discovered by Tru-Cape’s Buks Nel. It is the most successful new cultivar in terms of terms of numbers of trees ordered since its launch.” she wrote.
